Method
 

Preparation
  1. Toast two slices of bread to your preferred crispness.
  2. Whisk 2 eggs in a small bowl with milk (if using), salt, and pepper until well combined.
Cooking and Serving
  1. Heat a non-stick pan over medium heat and add a tiny bit of butter or oil.
  2. Pour the whisked eggs into the hot pan and let them sit for a few seconds until the edges set.
  3. Gently push the cooked egg from the edges towards the center with a spatula, continuing until the eggs are cooked through, soft, and moist.

Notes

For extra fluffy eggs, whisk vigorously or add a tiny pinch of baking powder to the eggs.
