Cooking Steps
  1. Heat a non-stick pan over medium heat and place the whole-wheat tortilla in it.
  2. While the pan heats, quickly scramble one egg.
  3. Sprinkle one half of the tortilla with cheddar cheese, black beans, and the scrambled egg; optionally add cilantro or salsa.
  4. Fold the other half of the tortilla over the filling to create the quesadilla.
  5. Cook for 2-3 minutes per side until the tortilla is golden brown and the cheese is melted.
