- Preheat your oven to 400°F (200°C) and line a large, rimmed baking sheet with parchment paper.
- In a large bowl, combine the chopped chicken, potatoes, and optional broccoli florets.
- Drizzle olive oil over the ingredients, then sprinkle with garlic powder, onion powder, paprika, dried thyme, dried rosemary, salt, and black pepper.
- Toss everything until evenly coated with oil and seasonings.
- Transfer the seasoned chicken and potatoes to the prepared baking sheet, spreading them in a single layer to prevent overcrowding.
- Bake for 25-35 minutes, or until the chicken is cooked through (165°F / 74°C) and the potatoes are tender, golden, and crispy.
- Remove from the oven and serve immediately.
Notes
For extra flavor, marinate the chicken for 30 minutes before baking. To achieve crispier potatoes, ensure they are spread in a single layer and not overlapping.
