  • 1.5 lbs boneless, skinless chicken thighs cut into 1.5-inch pieces
  • 1.5 lbs small gold potatoes quartered into 1-inch pieces
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika sweet
  • 0.5 tsp dried thyme
  • 0.5 tsp dried rosemary
  • Salt & black pepper to taste

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C) and line a large, rimmed baking sheet with parchment paper.
  2. In a large bowl, combine the chopped chicken, potatoes, and optional broccoli florets.
  3. Drizzle olive oil over the ingredients, then sprinkle with garlic powder, onion powder, paprika, dried thyme, dried rosemary, salt, and black pepper.
  4. Toss everything until evenly coated with oil and seasonings.
  5. Transfer the seasoned chicken and potatoes to the prepared baking sheet, spreading them in a single layer to prevent overcrowding.
  6. Bake for 25-35 minutes, or until the chicken is cooked through (165°F / 74°C) and the potatoes are tender, golden, and crispy.
  7. Remove from the oven and serve immediately.

Notes

For extra flavor, marinate the chicken for 30 minutes before baking. To achieve crispier potatoes, ensure they are spread in a single layer and not overlapping.
