  • Salt and freshly ground black pepper to taste
  • 4 large eggs
  • 2 tbsp chopped fresh parsley or chives for garnish (optional)

Method
 

Cooking Steps
  1. Heat a large oven-safe skillet over medium-high heat and add olive oil.
  2. Add breakfast sausage to the skillet, break it up, and cook until browned and cooked through, then drain excess grease.
  3. Add chopped onion and bell pepper to the skillet and cook until they begin to soften, about 3-5 minutes.
  4. Stir in pre-cooked diced potatoes, smoked paprika, and garlic powder, tossing to coat and crisp up slightly, then season with salt and pepper.
  5. Create four wells in the mixture and crack one egg into each.
  6. Reduce heat to medium-low, cover the skillet, and cook for 5-8 minutes until eggs are set to your desired consistency.
  7. Remove from heat, garnish with fresh parsley or chives if desired, and serve hot with optional toppings.

Notes

For extra flavor, you can add a pinch of cayenne pepper with the smoked paprika. Adjust cooking time for eggs based on your preference for yolk firmness. This dish is excellent for meal prep; simply store in airtight containers and reheat. Serve with crusty bread for a complete meal.
