Cooking Steps
- Heat a large oven-safe skillet over medium-high heat and add olive oil.
- Add breakfast sausage to the skillet, break it up, and cook until browned and cooked through, then drain excess grease.
- Add chopped onion and bell pepper to the skillet and cook until they begin to soften, about 3-5 minutes.
- Stir in pre-cooked diced potatoes, smoked paprika, and garlic powder, tossing to coat and crisp up slightly, then season with salt and pepper.
- Create four wells in the mixture and crack one egg into each.
- Reduce heat to medium-low, cover the skillet, and cook for 5-8 minutes until eggs are set to your desired consistency.
- Remove from heat, garnish with fresh parsley or chives if desired, and serve hot with optional toppings.
Notes
For extra flavor, you can add a pinch of cayenne pepper with the smoked paprika. Adjust cooking time for eggs based on your preference for yolk firmness. This dish is excellent for meal prep; simply store in airtight containers and reheat. Serve with crusty bread for a complete meal.
