Preparation
- Pat the chicken breasts dry and season them generously with salt, pepper, garlic powder, and dried oregano on both sides.
Cooking
- Heat olive oil in a large skillet over medium-high heat, then add chicken and sear for 3-4 minutes per side until golden brown and cooked through.
- Remove chicken from the skillet, set aside, and tent loosely with foil.
- Reduce heat to medium, pour chicken broth into the skillet, and scrape up any browned bits; bring to a gentle simmer.
- If using, stir in heavy cream and lemon juice, then simmer for 1-2 minutes until the sauce slightly thickens.
- Add fresh spinach to the skillet and stir until it wilts, which takes about 1-2 minutes.
- Return the cooked chicken to the skillet, nestling it into the sauce and spinach, and heat for another minute to warm through.
- Stir in the fresh chopped parsley and dill.

- Serve immediately, garnished with fresh lemon slices if desired.
