Speedy Lemon Herb Skillet Chicken with Spinach

  • 1.5 lbs boneless, skinless chicken breasts (2-3 breasts), sliced into 1/2-inch thick cutlets or butterflied and then halved
  • 1 tablespoon olive oil
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream (optional, for a creamier sauce)
  • 2 cups fresh spinach
  • lemon half juiced, half thinly sliced for garnish
Seasoning & Herbs
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon fresh dill chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste

Method
 

Preparation
  1. Pat the chicken breasts dry and season them generously with salt, pepper, garlic powder, and dried oregano on both sides.
Cooking
  1. Heat olive oil in a large skillet over medium-high heat, then add chicken and sear for 3-4 minutes per side until golden brown and cooked through.
  2. Remove chicken from the skillet, set aside, and tent loosely with foil.
  3. Reduce heat to medium, pour chicken broth into the skillet, and scrape up any browned bits; bring to a gentle simmer.
  4. If using, stir in heavy cream and lemon juice, then simmer for 1-2 minutes until the sauce slightly thickens.
  5. Add fresh spinach to the skillet and stir until it wilts, which takes about 1-2 minutes.
  6. Return the cooked chicken to the skillet, nestling it into the sauce and spinach, and heat for another minute to warm through.
  7. Stir in the fresh chopped parsley and dill.
Serving
  1. Serve immediately, garnished with fresh lemon slices if desired.

Notes

For extra flavor, consider marinating the chicken for 15-30 minutes before cooking. Adjust seasoning to your preference.
