Preparation
- In a large bowl, toss the broccoli florets, bell pepper strips, and red onion slices with 1 tablespoon of olive oil, minced garlic, dried dill, paprika, salt, and pepper.
- Ensure all vegetables are well coated with the seasoning.
Cooking
- Heat the remaining 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat.
- Add the seasoned vegetables to the hot skillet and sauté for 5-7 minutes, until they begin to soften and color.
- Create four spaces among the vegetables, pat the salmon fillets dry, season with salt and pepper, and place them in the skillet.
- Top each salmon fillet with a thin lemon slice.
- Reduce heat to medium, cover the skillet, and cook for 10-15 minutes, or until the salmon is cooked through.
Serving
- Remove the skillet from heat and squeeze fresh lemon juice over the entire dish.
- Garnish with fresh parsley or dill if desired, and serve immediately.
Notes
For extra flavor, you can marinate the salmon in a little lemon juice and dill for 15 minutes before cooking. Adjust cooking time for salmon based on thickness; aim for an internal temperature of 145°F (63°C).
