Speedy Lemon Herb Salmon Skillet Meal

Ingredients
  

Main Ingredients
  • 4 fillets Salmon Fillets (6 oz each), skin on or off, wild-caught preferred
  • 3 cups Broccoli Florets fresh or frozen (thawed)
  • 2 peppers Bell Peppers any color, sliced into strips
  • 1 small Red Onion thinly sliced
  • 3 cloves Garlic minced
  • 2 tablespoons Olive Oil
  • 1 lemon Lemon half sliced for cooking, half for serving
Seasoning
  • 1 teaspoon Dried Dill (or 1 tablespoon fresh, chopped)
  • 0.5 teaspoon Paprika
  • Salt & Black Pepper To taste
Garnish (optional)
  • Fresh Parsley or Dill For garnish (optional)

  • Large oven-safe skillet (cast iron preferred)

Method
 

Preparation
  1. In a large bowl, toss the broccoli florets, bell pepper strips, and red onion slices with 1 tablespoon of olive oil, minced garlic, dried dill, paprika, salt, and pepper.
  2. Ensure all vegetables are well coated with the seasoning.
Cooking
  1. Heat the remaining 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat.
  2. Add the seasoned vegetables to the hot skillet and sauté for 5-7 minutes, until they begin to soften and color.
  3. Create four spaces among the vegetables, pat the salmon fillets dry, season with salt and pepper, and place them in the skillet.
  4. Top each salmon fillet with a thin lemon slice.
  5. Reduce heat to medium, cover the skillet, and cook for 10-15 minutes, or until the salmon is cooked through.
Serving
  1. Remove the skillet from heat and squeeze fresh lemon juice over the entire dish.
  2. Garnish with fresh parsley or dill if desired, and serve immediately.

Notes

For extra flavor, you can marinate the salmon in a little lemon juice and dill for 15 minutes before cooking. Adjust cooking time for salmon based on thickness; aim for an internal temperature of 145°F (63°C).
