  • 0.5 tsp dried oregano

  • 0.125 tsp black pepper

  • 1 lemon, cut into wedges

Preparation
  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Mixing
  1. In a large bowl, combine the shrimp, bell pepper, broccoli florets, olive oil, garlic powder, smoked paprika, dried oregano, salt, and black pepper, tossing until everything is evenly coated.
Roasting
  1. Spread the seasoned shrimp and vegetables in a single layer on the prepared baking sheet, ensuring there is enough space between items for even cooking.
  2. Roast for 10-15 minutes, until the shrimp turn pink and opaque and the vegetables are tender-crisp.
Serving
  1. Carefully remove the pan from the oven, then squeeze fresh lemon juice over the top and sprinkle with fresh parsley if desired. Serve immediately.

Notes

This recipe is easily adaptable; feel free to swap in other quick-cooking vegetables like asparagus or pre-cut zucchini. For a little extra heat, add a pinch of red pepper flakes with the other seasonings. Be careful not to overcook the shrimp, as they can become rubbery quickly.
