Ingredients

Main Ingredients
  • 1.5 lbs boneless, skinless chicken breasts cut into 1-inch pieces
  • 2 tbsp olive oil divided
  • 1 broccoli large head, cut into florets
  • 1 lemon half juiced, half sliced for garnish
  • 2 garlic cloves, minced
  • 1 tsp dried Italian herbs oregano, thyme, basil blend
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • fresh parsley or cilantro Optional, for garnish
  • cooked rice or quinoa Optional, for serving

Equipment

  • Large bowl
  • Baking sheet
  • Skillet
  • Frying pan

Method

Roasting Broccoli
  1. Preheat the oven to 400°F (200°C).
  2. Toss broccoli florets with 1 tablespoon olive oil, salt, and pepper in a large bowl. Spread them on a baking sheet and roast for 15-20 minutes until tender-crisp.
Preparing Chicken
  1. While broccoli roasts, pat chicken dry. In the same bowl, toss chicken with the remaining 1 tablespoon olive oil, minced garlic, lemon juice, and Italian herbs.
Cooking Chicken
  1. Heat a large skillet over medium-high heat. Add seasoned chicken and cook for 5-7 minutes, stirring occasionally, until cooked through and lightly browned.
Combining and Serving
  1. Combine cooked chicken and roasted broccoli in the skillet or serve them side-by-side.
  2. Garnish with fresh parsley or cilantro and lemon slices if desired. Serve immediately, optionally over rice or quinoa.

Notes

For an extra touch of flavor, marinate the chicken for 15-30 minutes before cooking. Ensure chicken is cooked in batches if your skillet is not large enough to avoid overcrowding, which can lead to steaming rather than browning.
