  • 1 tsp grated fresh ginger optional
  • 1 tbsp olive oil or sesame oil
  • 2 cups cooked rice, quinoa, or other grain
  • 2 cups mixed greens (spinach, power greens, etc.)
  • 1 cup chopped vegetables (steamed broccoli, shredded carrots, bell peppers, edamame)
  • Sesame seeds for garnish
  • Sliced green onions for garnish

Method
 

Preparation
  1. Whisk together soy sauce, honey, rice vinegar, minced garlic, and grated ginger in a medium bowl to create the honey garlic sauce.
  2. Add the peeled and deveined shrimp to the sauce, toss to coat, and let marinate for at least 10 minutes while preparing other bowl components.
  3. Heat olive oil or sesame oil in a large skillet over medium-high heat. Cook the shrimp in a single layer for 1-2 minutes per side until pink and opaque.
  4. Pour any remaining marinade over the cooked shrimp and cook for another 30 seconds to 1 minute to allow the sauce to thicken and coat the shrimp.
  5. Divide cooked grain and mixed greens among 2-4 bowls, then arrange the honey garlic shrimp and chopped vegetables on top.
  6. Garnish with sesame seeds and sliced green onions before serving immediately.

Notes

For extra flavor, marinate the shrimp for up to 30 minutes. Adjust the amount of garlic and ginger to your preference. This recipe is easily adaptable with any of your favorite grains or vegetables.
