  • 1.5 lbs boneless, skinless chicken thighs cut into bite-sized pieces
  • 3 tablespoons minced chipotle peppers in adobo sauce adjust to taste
  • 3 tablespoons honey
  • 4 cloves garlic, minced
  • 2 tablespoons fresh lime juice plus extra for serving
  • 1 tablespoon olive oil plus more for cooking
  • 2 cups uncooked rice white or brown
  • 1 can black beans 15-ounce, rinsed and drained
  • 1.5 cups corn fresh, frozen, or canned, drained
  • 1 large avocado sliced or diced
  • 0.5 red onion thinly sliced or diced
  • 0.25 cup fresh cilantro, chopped

  • sour cream, Greek yogurt, crumbled cotija cheese, pickled jalapeƱos

Method
 

Prepare Chicken
  1. Combine chipotle peppers, adobo sauce, honey, minced garlic, lime juice, and olive oil in a bowl. Add chicken and toss to coat.
  2. Marinate for at least 30 minutes, or 1-2 hours in the refrigerator for best flavor.
Cook Rice
  1. Cook rice according to package directions while the chicken marinates.
Cook Chicken
  1. Heat a large skillet with olive oil over medium-high heat.
  2. Add marinated chicken in a single layer and cook for 6-8 minutes, flipping occasionally, until cooked through and lightly caramelized.
  3. Add any extra marinade during the last few minutes for a thicker sauce.
Assemble Bowls
  1. Divide cooked rice among serving bowls.
  2. Top rice with the cooked honey chipotle chicken, black beans, corn, sliced avocado, red onion, and fresh cilantro.
  3. Add a dollop of sour cream or Greek yogurt and a squeeze of fresh lime juice to each bowl before serving.

Notes

For extra heat, add a pinch of cayenne pepper to the marinade. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
