Prepare Chicken
- Combine chipotle peppers, adobo sauce, honey, minced garlic, lime juice, and olive oil in a bowl. Add chicken and toss to coat.

Cook Rice
- Cook rice according to package directions while the chicken marinates.
Cook Chicken
- Heat a large skillet with olive oil over medium-high heat.
- Add marinated chicken in a single layer and cook for 6-8 minutes, flipping occasionally, until cooked through and lightly caramelized.
- Add any extra marinade during the last few minutes for a thicker sauce.
Assemble Bowls
- Divide cooked rice among serving bowls.
- Top rice with the cooked honey chipotle chicken, black beans, corn, sliced avocado, red onion, and fresh cilantro.
- Add a dollop of sour cream or Greek yogurt and a squeeze of fresh lime juice to each bowl before serving.
Notes
For extra heat, add a pinch of cayenne pepper to the marinade. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
