  • 1-2 tablespoons olive oil for searing
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon dried oregano
  • Salt and black pepper to taste

Method
 

Cooking Instructions
  1. Pat chicken thighs dry with paper towels. In a small bowl, combine smoked paprika, garlic powder, onion powder, dried oregano, salt, and pepper, then season the chicken.
  2. Heat a large cast-iron skillet over medium-high heat with olive oil until it shimmers.
  3. Sear chicken thighs in the hot skillet for 4-6 minutes per side until golden brown and crispy. Cook in batches if needed.
  4. Reduce heat to medium-low, cover, and cook for 5-8 minutes until chicken reaches 165°F (74°C). Optionally, finish in a preheated 375°F (190°C) oven for 5-10 minutes.
  5. Remove chicken from skillet, tent with foil, and rest for 5 minutes. Slice or serve whole, garnished with fresh herbs if desired.

Notes

For extra flavor, let the seasoned chicken marinate in the refrigerator for at least 30 minutes before cooking.
