The Process
- Whisk together 1 tbsp soy sauce, sesame oil, rice vinegar, and cornstarch in a bowl, then add the shrimp, toss to coat, and let marinate for at least 10 minutes.
- Combine the remaining 1 tbsp soy sauce, grated ginger, and minced garlic in a small bowl, stir well, and set aside.
- Heat a large wok or skillet over high heat with olive or peanut oil, ensuring it's very hot.
- Add broccoli, red bell pepper, snap peas, and carrots to the hot pan; stir-fry for 3-5 minutes until tender-crisp, then remove and set aside.
- Add more oil if needed, then cook marinated shrimp in a single layer for 1-2 minutes per side until pink and opaque.
- Return vegetables to the pan with the shrimp, pour the stir-fry sauce over everything, and toss for 1-2 minutes until the sauce thickens slightly.
- Garnish with sliced green onions and serve immediately over steamed rice or noodles.
Notes
For extra flavor, you can add a pinch of red pepper flakes to the stir-fry sauce for a bit of heat. Make sure your wok or skillet is very hot before adding ingredients for the best stir-fry results.
