  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp soy sauce low-sodium preferred
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch
  • 1 tbsp fresh ginger, grated
  • 2 garlic, minced cloves
  • 1 tbsp olive oil or peanut oil
  • 1 broccoli, cut into small florets head
  • 1 red bell pepper, thinly sliced
  • 1 cup snap peas
  • 1/2 cup carrots, thinly sliced or julienned
  • Green onions, sliced for garnish
  • Cooked rice or noodles for serving

Method
 

The Process
  1. Whisk together 1 tbsp soy sauce, sesame oil, rice vinegar, and cornstarch in a bowl, then add the shrimp, toss to coat, and let marinate for at least 10 minutes.
  2. Combine the remaining 1 tbsp soy sauce, grated ginger, and minced garlic in a small bowl, stir well, and set aside.
  3. Heat a large wok or skillet over high heat with olive or peanut oil, ensuring it's very hot.
  4. Add broccoli, red bell pepper, snap peas, and carrots to the hot pan; stir-fry for 3-5 minutes until tender-crisp, then remove and set aside.
  5. Add more oil if needed, then cook marinated shrimp in a single layer for 1-2 minutes per side until pink and opaque.
  6. Return vegetables to the pan with the shrimp, pour the stir-fry sauce over everything, and toss for 1-2 minutes until the sauce thickens slightly.
  7. Garnish with sliced green onions and serve immediately over steamed rice or noodles.

Notes

For extra flavor, you can add a pinch of red pepper flakes to the stir-fry sauce for a bit of heat. Make sure your wok or skillet is very hot before adding ingredients for the best stir-fry results.
