Preparation
- Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.
- Cook the breakfast sausage in a large skillet over medium heat until browned, breaking it up with a spoon. Drain excess grease and, if desired, add chopped onion and bell pepper during the last 5 minutes of cooking until softened.
- In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
Assembly and Baking
- If using, scatter the cubed stale bread evenly over the bottom of the prepared baking dish.
- Sprinkle the cooked sausage and any vegetables over the bread cubes.
- Pour the egg mixture evenly over the sausage and bread.
- Sprinkle the shredded cheese over the top.
- Bake for 30-40 minutes, or until the casserole is set and the cheese is golden and bubbly.
- Let the casserole rest for 5-10 minutes before slicing and serving.
Notes
This casserole can be prepared the night before and baked in the morning. Cover and refrigerate after assembly, then add 10-15 minutes to the baking time.
