Simple Sausage and Egg Casserole

Main Ingredients
  • 1 pound breakfast sausage (pork, turkey, or chicken)
  • 10 large eggs
  • 1/2 cup milk (any kind, whole milk for richer texture)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese (or Colby Jack)
Optional Ingredients
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 1 cup cubed stale bread

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.
  2. Cook the breakfast sausage in a large skillet over medium heat until browned, breaking it up with a spoon. Drain excess grease and, if desired, add chopped onion and bell pepper during the last 5 minutes of cooking until softened.
  3. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
Assembly and Baking
  1. If using, scatter the cubed stale bread evenly over the bottom of the prepared baking dish.
  2. Sprinkle the cooked sausage and any vegetables over the bread cubes.
  3. Pour the egg mixture evenly over the sausage and bread.
  4. Sprinkle the shredded cheese over the top.
  5. Bake for 30-40 minutes, or until the casserole is set and the cheese is golden and bubbly.
  6. Let the casserole rest for 5-10 minutes before slicing and serving.

Notes

This casserole can be prepared the night before and baked in the morning. Cover and refrigerate after assembly, then add 10-15 minutes to the baking time.
