Preparation
- Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
- Scatter the chopped bell peppers, onion, and fresh spinach evenly into the bottom of the prepared baking dish.
- Sprinkle half of the shredded cheese over the vegetable layer.
- In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined and slightly foamy.
- Pour the egg mixture over the fillings in the baking dish, then gently shake to ensure even distribution.
- Sprinkle the remaining shredded cheese over the top of the casserole.
- Bake for 30-35 minutes, or until the casserole is set, puffed, and lightly golden brown.
- Remove from the oven and let it rest for 5-10 minutes before slicing and serving.
