  • 1 cup shredded cheddar cheese
  • 1 cup chopped bell peppers any color
  • 1/2 cup chopped onion
  • 1 cup fresh spinach
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray or butter for greasing

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  2. Scatter the chopped bell peppers, onion, and fresh spinach evenly into the bottom of the prepared baking dish.
  3. Sprinkle half of the shredded cheese over the vegetable layer.
  4. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined and slightly foamy.
  5. Pour the egg mixture over the fillings in the baking dish, then gently shake to ensure even distribution.
  6. Sprinkle the remaining shredded cheese over the top of the casserole.
  7. Bake for 30-35 minutes, or until the casserole is set, puffed, and lightly golden brown.
  8. Remove from the oven and let it rest for 5-10 minutes before slicing and serving.

Notes
