  • 1 lb boneless, skinless chicken breasts cut into 1-inch pieces
  • 1 head broccoli florets
  • 2 bell peppers sliced
  • 1 red onion cut into wedges
Seasoning
  • 2 tbsp olive oil
  • 1 tbsp dried Italian seasoning
  • 0.5 tsp garlic powder
  • Salt to taste
  • Pepper to taste
  • Lemon wedges for serving

Instructions
  1. Preheat your oven to 400°F (200°C) to get it ready for roasting.
  2. In a large bowl, combine the chicken and vegetables; toss them with olive oil, Italian seasoning, garlic powder, salt, and pepper until everything is evenly coated.
  3. Spread the seasoned chicken and vegetable mixture in a single layer on a large baking sheet.
  4. Roast for 20-25 minutes, or until the chicken is fully cooked and the vegetables are tender.
  5. Serve the dish hot, garnished with fresh lemon wedges.

Notes

For extra flavor, marinate the chicken for at least 30 minutes before roasting. You can also add other vegetables like zucchini or cherry tomatoes.
