  • 1/2 lemon thinly sliced
  • Salt and black pepper to taste

Instructions
  1. Preheat your oven to 400°F (200°C).
  2. On a large baking sheet, combine the chicken, broccoli, bell pepper, and red onion.
  3. Drizzle with olive oil, then season with Italian herbs, salt, and pepper; toss to coat.
  4. Arrange lemon slices over the chicken and vegetables.
  5. Roast for 20-25 minutes, stirring halfway, until chicken is cooked through and vegetables are tender-crisp.
  6. Serve the dish immediately.

Ensure chicken is cooked to 165°F (74°C) for food safety. Adjust seasoning as desired.
