  • 1 pound large or jumbo shrimp, peeled and deveined
  • 1 large head broccoli, cut into bite-sized florets
  • 4 tablespoons unsalted butter, melted
  • 4-5 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 lemon, for juice and optional wedges
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Salt to taste
  • Black pepper to taste
  • red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
  2. Toss the broccoli florets with olive oil, salt, and pepper, then spread them in a single layer on one half of the sheet pan.
  3. Roast the broccoli for 10-12 minutes to give it a head start.
  4. While the broccoli roasts, melt butter and mix with minced garlic, oregano, paprika, salt, pepper, and optional red pepper flakes.
  5. Add shrimp to the butter mixture and toss to coat.
  6. Remove the sheet pan from the oven and arrange the seasoned shrimp on the other half of the pan.
  7. Return the sheet pan to the oven and roast for another 8-12 minutes until the shrimp are pink and opaque and the broccoli is tender.
  8. Squeeze fresh lemon juice over the dish and garnish with fresh parsley before serving.

Notes

Ensure shrimp are peeled and deveined before cooking. Adjust seasoning to your preference.
