Preparation
- Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
- Toss the broccoli florets with olive oil, salt, and pepper, then spread them in a single layer on one half of the sheet pan.
- Roast the broccoli for 10-12 minutes to give it a head start.
- While the broccoli roasts, melt butter and mix with minced garlic, oregano, paprika, salt, pepper, and optional red pepper flakes.
- Add shrimp to the butter mixture and toss to coat.
- Remove the sheet pan from the oven and arrange the seasoned shrimp on the other half of the pan.
- Return the sheet pan to the oven and roast for another 8-12 minutes until the shrimp are pink and opaque and the broccoli is tender.
- Squeeze fresh lemon juice over the dish and garnish with fresh parsley before serving.
Notes
Ensure shrimp are peeled and deveined before cooking. Adjust seasoning to your preference.
