Savory Southwest Turkey & Rice Bowl

  • 1 tbsp olive oil
  • 1 lb lean ground turkey (93% lean or higher)
  • 1 large onion chopped
  • 2 garlic minced
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/4 tsp smoked paprika
  • 1/2 tsp dried oregano
  • Salt and black pepper to taste
  • 4 cups cooked brown rice
  • 1 black beans rinsed and drained
  • 1 cup frozen corn
  • 1/2 cup low-sodium chicken broth
Optional Toppings
  • 1/4 cup chopped fresh cilantro
  • 2 lime wedges
  • 1/4 cup low-fat Greek yogurt
  • 1/4 cup salsa
  • 1/4 sliced avocado

Method
 

Cooking Instructions
  1. Heat olive oil in a large skillet or non-stick pan over medium-high heat.
  2. Add ground turkey to the pan, break it up, and cook until browned; drain excess fat.
  3. Stir in chopped onion and minced garlic; cook for 3-5 minutes until softened and translucent.
  4. Add cumin, chili powder, smoked paprika, and oregano; cook for another minute until fragrant, then season with salt and pepper.
  5. Add rinsed black beans, frozen corn, and chicken broth; bring to a simmer, then cover and cook for 5-7 minutes until heated through.
  6. Divide cooked brown rice among four bowls, then spoon the turkey and vegetable mixture over the rice.
  7. Garnish with fresh cilantro, a squeeze of lime, Greek yogurt or salsa, and avocado if desired; serve immediately.

Notes

This recipe is perfect for a quick weeknight meal and can be easily customized with your favorite toppings. For a spicier kick, add a pinch of cayenne pepper with the other spices.
