  • 1 lb ground beef (80/20 or 85/15)
  • green cabbage cored and thinly sliced (about 6-8 cups)
  • 1 small onion chopped
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 2-3 tbsp soy sauce (or tamari/coconut aminos)
  • 1 tbsp apple cider vinegar
  • 1 tsp sesame oil
  • 1/2 tsp red pepper flakes (optional)
  • Salt to taste
  • Black pepper to taste

Method
 

Cooking Instructions
  1. Heat olive oil in a large skillet or wok over medium-high heat. Add ground beef and cook until browned, then drain excess fat.
  2. Push beef to one side and add chopped onion; cook until softened. Incorporate minced garlic and grated ginger, then mix with the beef.
  3. Stir in the thinly sliced cabbage, ensuring it combines well with the beef and aromatics.
  4. Whisk together soy sauce, apple cider vinegar, sesame oil, and red pepper flakes in a small bowl.
  5. Pour the sauce over the mixture, stir to coat, then simmer covered for 5-8 minutes until cabbage is tender-crisp.
  6. Taste and adjust seasoning with salt and pepper. Serve hot, garnished with green onions and sesame seeds if desired.

Notes

For a spicier kick, increase the amount of red pepper flakes. You can also add other low-carb vegetables like bell peppers or mushrooms during step 3. Adjust soy sauce to your preference, and use tamari for a gluten-free option.
