Savory Lean Ground Turkey & Snap Pea Stir Fry

  • 1 tablespoon olive oil or sesame oil
  • 1 pound lean ground turkey 93% lean or higher
  • 1 yellow onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 1 red bell pepper thinly sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
Sauce Ingredients
  • 2 tablespoons low-sodium soy sauce or tamari for gluten-free
  • 1 tablespoon oyster sauce optional
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha or to taste
  • 1 teaspoon cornstarch
  • 2 tablespoons cold water
For Serving
  • Sesame seeds for garnish
  • Cooked brown rice or quinoa for serving

Method
 

Cooking Instructions
  1. Heat oil in a large skillet or wok over medium-high heat. Add ground turkey and cook until browned, then drain excess grease and set aside.
  2. In the same skillet, cook chopped onion for 2-3 minutes until softened. Add minced garlic and grated ginger, cooking for another minute until fragrant.
  3. Stir in sliced red bell pepper, broccoli florets, and snap peas, cooking for 3-5 minutes until tender-crisp.
  4. Whisk together soy sauce, oyster sauce (if using), rice vinegar, and sriracha in a small bowl.
  5. Return turkey to the skillet with the vegetables, pour the sauce over, and stir to coat.
  6. Re-stir the cornstarch slurry, then add it to the skillet and cook, stirring constantly, for 1-2 minutes until the sauce thickens.
  7. Remove from heat, garnish with sesame seeds, and serve immediately over cooked brown rice or quinoa.

Notes

For a spicier kick, add more sriracha. You can also experiment with other vegetables like carrots or mushrooms.
