  • 1 cup pitted Medjool dates (about 10-12 dates)
  • 1/2 cup creamy almond butter (or other nut butter)
  • 1/4 cup unsweetened shredded coconut (plus extra for rolling)
  • 1/4 teaspoon sea salt flakes
Optional Additions
  • 1 tablespoon chia seeds (for extra texture and nutrition)
  • 2 tablespoon dark chocolate chips (melted for drizzle)

Method
 

Preparation
  1. Soak dry dates in warm water for 5-10 minutes if needed, then drain thoroughly. Process the pitted dates in a food processor until a sticky paste forms.
Making the Dough
  1. Add almond butter, shredded coconut, sea salt, and optional chia seeds to the food processor with the date paste. Process until all ingredients are well combined into a sticky dough.
Forming and Topping
  1. Roll the mixture into small, 1-inch, bite-sized balls. Optionally, roll the formed bites in extra shredded coconut or drizzle with melted dark chocolate chips, then refrigerate briefly to set.
Chill and Serve
  1. Place the bites on a plate or in an airtight container and chill in the refrigerator for at least 30 minutes to firm up. Enjoy as a satisfying treat and store leftovers in the refrigerator for up to a week.

Notes

For an extra flavor boost, try adding a pinch of cinnamon or a dash of vanilla extract to the mixture. These bites are also great with a sprinkle of flaky sea salt on top before chilling for an enhanced sweet and salty experience.
