  • 1/4 teaspoon dried thyme
  • Salt and freshly ground black pepper to taste
  • Fresh parsley or chives for garnish (optional)

Method
 

Preparation
  1. Peel and dice potatoes into 1/2-inch cubes, then rinse under cold water to remove starch.
  2. Thoroughly pat the rinsed potatoes dry with a kitchen towel to ensure crispiness.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Add sliced onions and cook for 5-7 minutes until softened and golden, then remove and set aside.
  5. Add more oil if needed, then cook dried potato cubes in a single layer for 8-10 minutes, flipping until golden brown and crispy.
  6. Return caramelized onions to the skillet with the potatoes and stir gently.
  7. Sprinkle in paprika, garlic powder, rosemary, thyme, salt, and pepper, tossing to coat evenly.
  8. Cook for another 1-2 minutes, stirring, to combine flavors.
  9. Remove from heat, garnish with fresh parsley or chives if desired, and serve immediately.

Notes

For extra flavor, you can use a mix of herbs like oregano or marjoram. Adjust seasoning to your preference.
