  • 1 ½ cups all-purpose flour
  • ¼ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 cup milk dairy or non-dairy
  • 2 large eggs
  • ¼ cup melted unsalted butter or vegetable oil
  • 1 teaspoon vanilla extract
  • 1 medium apple, peeled, cored, and finely diced Granny Smith or Honeycrisp recommended
Maple Glaze
  • 1 ½ cups powdered sugar
  • 2 tablespoons milk or water
  • 1 tablespoon pure maple syrup

Method
 

Instructions
  1. In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, and salt to combine.
  2. In a separate medium bowl, whisk together the milk, eggs, melted butter or oil, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry and stir gently until just combined; avoid overmixing to keep waffles tender.
  4. Gently fold the finely diced apples into the prepared batter.
  5. Preheat your waffle iron according to its instructions, greasing if necessary.
  6. Scoop 1/4 to 1/3 cup of batter into the waffle iron, then cook for 3-5 minutes until golden brown and crispy.
  7. While donuts cook, whisk powdered sugar, milk or water, maple syrup, and a pinch of salt in a shallow bowl until smooth and pourable.
  8. Once cooked, remove waffles from the iron and immediately dip or drizzle with glaze, then place on a wire rack to set before serving warm.

Notes

Ensure your waffle iron is hot for crispy results. Adjust the consistency of the maple glaze by adding more liquid or powdered sugar as needed. These donuts are best served warm soon after glazing.
