  • 2 fillets salmon fillets about 6 oz each
  • 1 tablespoon olive oil
  • 1 lemon half thinly sliced, half for juice
  • 2 cloves garlic, minced
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh thyme, chopped
  • Salt and black pepper to taste
  • 1 cup asparagus spears tough ends trimmed

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pat the salmon fillets dry and place them on the prepared baking sheet.
Seasoning & Roasting
  1. In a small bowl, whisk together olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper.
  2. Brush the herb mixture over the salmon fillets and arrange lemon slices on top.
  3. Scatter asparagus spears around the salmon on the baking sheet, optionally drizzling with olive oil and a pinch of salt.
  4. Roast for 12-15 minutes, or until the salmon is cooked through and flakes easily.
Finishing Touches
  1. Squeeze fresh lemon juice over the cooked salmon and asparagus.
  2. Garnish with fresh chopped parsley if desired, then serve immediately with a side salad or crusty bread.
