Cooking Steps
- Heat sesame oil in a large wok over medium-high heat. Add shrimp and cook for 2-3 minutes per side until pink; remove and set aside.
- Add olive oil to the same wok, then cook sliced onion until softened for 3-4 minutes. Stir in minced garlic and cook for 1 minute until fragrant.
- Toss in sliced mushrooms and bell pepper, stir-frying for 3-5 minutes until tender-crisp.
- Whisk together soy sauce, mirin, oyster sauce (if using), sugar, grated ginger, and red pepper flakes (if using) in a small bowl.
- Add pre-cooked udon noodles and baby spinach to the wok. Pour the sauce over everything and toss constantly for 2-3 minutes until heated through and sauce is absorbed.
- Return the cooked shrimp to the wok and toss gently to combine and heat through.
- Divide Yaki Udon into serving bowls. Top generously with toasted sesame seeds, crispy fried shallots, fresh scallions, and nori strips; serve immediately.
Notes
For extra flavor, consider marinating the shrimp for 15 minutes in a teaspoon of soy sauce before cooking. Adjust the amount of red pepper flakes to your preferred spice level.
