  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup sliced shiitake mushrooms (or cremini)
  • 1 whole red bell pepper, thinly sliced
  • 1 cup baby spinach
  • 2 (7 oz) packages pre-cooked udon noodles

  • 1/4 cup soy sauce (low sodium preferred)
  • 2 tbsp mirin
  • 1 tbsp oyster sauce (optional)
  • 1 tsp sugar
  • 1/2 tsp ginger, grated
  • Pinch red pepper flakes (optional)
Toppings
  • Toasted sesame seeds
  • Crispy fried shallots (store-bought or homemade)
  • Fresh scallions, thinly sliced
  • Nori (seaweed) strips or flakes

Method
 

Cooking Steps
  1. Heat sesame oil in a large wok over medium-high heat. Add shrimp and cook for 2-3 minutes per side until pink; remove and set aside.
  2. Add olive oil to the same wok, then cook sliced onion until softened for 3-4 minutes. Stir in minced garlic and cook for 1 minute until fragrant.
  3. Toss in sliced mushrooms and bell pepper, stir-frying for 3-5 minutes until tender-crisp.
  4. Whisk together soy sauce, mirin, oyster sauce (if using), sugar, grated ginger, and red pepper flakes (if using) in a small bowl.
  5. Add pre-cooked udon noodles and baby spinach to the wok. Pour the sauce over everything and toss constantly for 2-3 minutes until heated through and sauce is absorbed.
  6. Return the cooked shrimp to the wok and toss gently to combine and heat through.
  7. Divide Yaki Udon into serving bowls. Top generously with toasted sesame seeds, crispy fried shallots, fresh scallions, and nori strips; serve immediately.

Notes

For extra flavor, consider marinating the shrimp for 15 minutes in a teaspoon of soy sauce before cooking. Adjust the amount of red pepper flakes to your preferred spice level.
