  • 8 oz block Feta Cheese packed in brine
  • 1 English cucumber or 2 Persian cucumbers
  • 1 pint cherry tomatoes
  • ½ cup pitted Kalamata olives
Dressing & Seasoning
  • 2 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • Salt to taste
  • Black pepper to taste

Method
 

Preparation
  1. Cut the block of feta cheese into roughly ¾-inch cubes.
  2. Wash and dry the cucumber, then cut it into ¾-inch pieces.
  3. Gently wash and pat dry the cherry tomatoes.
  4. Drain any brine from the pitted Kalamata olives.
Assembly and Serving
  1. Thread the ingredients onto skewers in the sequence of cucumber, cherry tomato, feta, and olive, repeating as desired.
  2. Arrange all assembled skewers neatly on a serving platter.
  3. Drizzle the skewers with extra virgin olive oil, then sprinkle with dried oregano and season with salt and pepper.
  4. Serve immediately and enjoy these refreshing Mediterranean Feta Skewers.

Notes

For best flavor, use high-quality feta cheese packed in brine, as it tends to be more flavorful and less crumbly. These skewers are best served fresh, but can be prepared a few hours in advance and kept refrigerated; just add the olive oil and seasonings right before serving.
