  • 2-3 spinach or lettuce leaves

Instructions
  1. Lay the whole-wheat tortilla flat and evenly spread hummus over the entire surface, leaving a small border.
  2. Layer spinach or lettuce leaves over the hummus, then sprinkle shredded carrots, diced bell peppers, and sliced cucumber; add fresh herbs if using.
  3. Tightly roll the tortilla into a log, starting from one edge.
  4. Using a sharp knife, carefully slice the rolled tortilla into 1-inch pinwheels.
  5. Arrange the pinwheels in a bento-style lunchbox with other sides like fruit slices or a small treat.

Notes
