Preparation
- Gently wipe the mushrooms clean with a damp cloth and slice larger ones into bite-sized pieces. Small mushrooms can be left whole or halved.
Cooking
- In a large skillet or wok, combine miso paste, mirin, and soy sauce over medium heat; stir until the miso paste is dissolved.
- Add the neutral oil and prepared mushrooms to the pan, then toss to coat them evenly.
- Sauté for 5-7 minutes, stirring occasionally, until the mushrooms soften, release their liquid, and begin to caramelize.
- Remove the pan from heat; drizzle in the toasted sesame oil and toss.
- Transfer to a serving dish, garnish with sesame seeds and green onions if desired, and serve hot.
Notes
For extra flavor, you can add a pinch of red pepper flakes with the miso sauce. Adjust soy sauce quantity based on desired saltiness. These mushrooms are great as a side dish or added to stir-fries, rice bowls, and noodles.
