  • 2 tablespoons White Miso Paste
  • 1 tablespoon Mirin
  • 1 teaspoon Soy Sauce (or tamari for gluten-free)
  • 1 teaspoon Toasted Sesame Oil
  • 1 tablespoon Neutral Oil (like canola, vegetable, or grapeseed)
Garnish (Optional)
  • 1 teaspoon Sesame Seeds (for garnish, optional)
  • 1 tablespoon Green Onions (thinly sliced, for garnish, optional)

Preparation
  1. Gently wipe the mushrooms clean with a damp cloth and slice larger ones into bite-sized pieces. Small mushrooms can be left whole or halved.
Cooking
  1. In a large skillet or wok, combine miso paste, mirin, and soy sauce over medium heat; stir until the miso paste is dissolved.
  2. Add the neutral oil and prepared mushrooms to the pan, then toss to coat them evenly.
  3. Sauté for 5-7 minutes, stirring occasionally, until the mushrooms soften, release their liquid, and begin to caramelize.
  4. Remove the pan from heat; drizzle in the toasted sesame oil and toss.
  5. Transfer to a serving dish, garnish with sesame seeds and green onions if desired, and serve hot.

Notes

For extra flavor, you can add a pinch of red pepper flakes with the miso sauce. Adjust soy sauce quantity based on desired saltiness. These mushrooms are great as a side dish or added to stir-fries, rice bowls, and noodles.
