Quick Lemon Herb Salmon with Asparagus

  • 2 about 6 oz each salmon fillets
  • 1 bunch, trimmed asparagus
Seasoning & Dressing
  • 1 tbsp olive oil
  • half sliced, half for juice lemon
  • 2 cloves, minced garlic
  • 1 tsp dried dill
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper.
Cooking
  1. Arrange the trimmed asparagus on one side of the baking sheet, then drizzle with 1/2 tbsp olive oil, and season with a pinch of salt and pepper before tossing to coat.
  2. Pat the salmon fillets dry and place them on the other side of the baking sheet, followed by drizzling them with the remaining 1/2 tbsp olive oil.
  3. In a small bowl, combine the minced garlic, dried dill, 1/2 tsp salt, and 1/4 tsp black pepper, then sprinkle this mixture evenly over the salmon fillets.
  4. Place the lemon slices on top of the salmon fillets.
  5. Bake for 12-15 minutes, or until the salmon is fully cooked and flakes easily with a fork, and the asparagus is tender-crisp.
Serving
  1. Before serving, squeeze fresh lemon juice over both the cooked salmon and asparagus.

Notes

For extra flavor, you can marinate the salmon in the lemon-herb mixture for 15-20 minutes before baking. Adjust baking time based on the thickness of your salmon fillets.
