Quick & Hearty Spinach-Feta Scramble with Avocado Toast

Ingredients
  

Scramble
  • 2 large eggs
  • 1 tbsp milk (dairy or non-dairy)
  • Pinch salt
  • Pinch black pepper
  • 1/2 cup fresh spinach roughly chopped
  • 1/4 cup crumbled feta cheese
  • 1 tsp olive oil or butter for cooking eggs
Avocado Toast
  • 1 slice whole-wheat bread
  • 1/2 ripe avocado
  • Squeeze lime juice optional
  • everything bagel seasoning to taste

Method
 

Scramble
  1. Whisk eggs, milk, salt, and pepper in a small bowl until combined.
  2. Heat oil in a non-stick pan over medium heat, then sauté spinach for 1-2 minutes until wilted.
  3. Pour the egg mixture into the pan with the spinach and cook, stirring gently, until almost set.
  4. Stir in feta cheese and cook for 30-60 seconds more, until melted and eggs are done. Remove from heat.
Avocado Toast
  1. While eggs cook, toast the whole-wheat bread.
  2. Mash avocado in a bowl, seasoning with salt and lime juice if desired.
  3. Spread mashed avocado on toast and sprinkle with everything bagel seasoning.
Serve
  1. Serve the spinach-feta scramble immediately alongside the avocado toast.

Notes

For extra flavor, add a pinch of garlic powder to the eggs or a few red pepper flakes to the spinach. Feel free to use any type of cheese you prefer instead of feta, such as goat cheese or shredded cheddar.
