Scramble
- Whisk eggs, milk, salt, and pepper in a small bowl until combined.
- Heat oil in a non-stick pan over medium heat, then sauté spinach for 1-2 minutes until wilted.
- Pour the egg mixture into the pan with the spinach and cook, stirring gently, until almost set.
- Stir in feta cheese and cook for 30-60 seconds more, until melted and eggs are done. Remove from heat.
Avocado Toast
- While eggs cook, toast the whole-wheat bread.
- Mash avocado in a bowl, seasoning with salt and lime juice if desired.
- Spread mashed avocado on toast and sprinkle with everything bagel seasoning.
Serve
- Serve the spinach-feta scramble immediately alongside the avocado toast.
Notes
For extra flavor, add a pinch of garlic powder to the eggs or a few red pepper flakes to the spinach. Feel free to use any type of cheese you prefer instead of feta, such as goat cheese or shredded cheddar.
