Nachos
- Cook the ground beef in a large skillet over medium-high heat, breaking it up until browned.
- Drain any excess fat from the skillet, then stir in the taco seasoning and water or beef broth.
- Simmer for 5-7 minutes until the liquid evaporates and the beef is seasoned, then remove from heat.
- Preheat the oven to 375°F (190°C) and arrange tortilla chips on a large baking sheet.
- Evenly spoon the seasoned ground beef over the chips, then sprinkle with shredded Mexican blend cheese.
- Bake for 8-10 minutes, or until the cheese is melted and bubbly; you can broil for 2-4 minutes for a quicker melt.
- While the nachos bake, whisk together sour cream, adobo sauce, and lime juice for the chipotle crema.
Serving
- Remove nachos from the oven and drizzle with chipotle crema, then top with red onion, cilantro, queso fresco, and pickled jalapeños.
- Serve the nachos hot and enjoy immediately.
Notes
For extra spice, add a pinch more cayenne pepper to the taco seasoning. You can also customize toppings with avocado, salsa, or black olives.
