Quick Ground Beef Street Nachos with Chipotle Crema

Quick and easy to make, these ground beef street nachos are loaded with flavor and topped with a zesty chipotle crema. Perfect for a weeknight meal or an appetizer.

Ingredients
  

Nachos
  • 1 pound lean ground beef
  • 1 tablespoon olive oil optional
  • 1 packet (1 oz) taco seasoning (or 1 tbsp chili powder, 1 tsp cumin, 1 tsp smoked paprika, 1/2 tsp garlic powder, 1/4 tsp onion powder, pinch of cayenne)
  • 1/2 cup water or beef broth
  • 1 large bag (13-16 oz) sturdy tortilla chips
  • 2 cups shredded Mexican blend cheese (Monterey Jack, cheddar, asadero)
Chipotle Crema
  • 1/2 cup sour cream
  • 1 tablespoon adobo sauce from canned chipotles (or to taste)
  • 1 teaspoon lime juice
Toppings
  • 1/2 cup finely diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup crumbled queso fresco optional
  • 2 tablespoons pickled jalapeño slices optional

Method
 

Nachos
  1. Cook the ground beef in a large skillet over medium-high heat, breaking it up until browned.
  2. Drain any excess fat from the skillet, then stir in the taco seasoning and water or beef broth.
  3. Simmer for 5-7 minutes until the liquid evaporates and the beef is seasoned, then remove from heat.
  4. Preheat the oven to 375°F (190°C) and arrange tortilla chips on a large baking sheet.
  5. Evenly spoon the seasoned ground beef over the chips, then sprinkle with shredded Mexican blend cheese.
  6. Bake for 8-10 minutes, or until the cheese is melted and bubbly; you can broil for 2-4 minutes for a quicker melt.
  7. While the nachos bake, whisk together sour cream, adobo sauce, and lime juice for the chipotle crema.
Serving
  1. Remove nachos from the oven and drizzle with chipotle crema, then top with red onion, cilantro, queso fresco, and pickled jalapeños.
  2. Serve the nachos hot and enjoy immediately.

Notes

For extra spice, add a pinch more cayenne pepper to the taco seasoning. You can also customize toppings with avocado, salsa, or black olives.
