Preparation
- Pat chicken breasts dry and slice or pound them to 1/2 inch thickness. Season generously with salt and pepper.
- In a small bowl, whisk together lemon juice, lemon zest, minced garlic, chicken broth, and dried oregano or thyme.
- Heat olive oil in a large skillet over medium-high heat.
Cooking
- Sear chicken in batches for 3-5 minutes per side until golden brown and cooked through.
- Remove chicken from the skillet and set it aside.
- Reduce heat to medium-low and pour the lemon-garlic mixture into the skillet, scraping up any browned bits.
- Simmer the sauce for 2-3 minutes until slightly thickened, then stir in butter if desired.
Serving
- Return cooked chicken to the pan and coat it in the sauce.
- Garnish generously with fresh chopped parsley and serve immediately.
Notes
For extra flavor, let the chicken marinate in some of the lemon-garlic mixture for 30 minutes before cooking.
