  • 1.5 lbs Boneless, Skinless Chicken Breasts cut into cutlets or pounded thin
  • 2-3 Lemons for zest and juice
  • 3-4 Garlic minced
  • 1/2 cup low sodium Chicken Broth
  • 2 tablespoons Olive Oil
  • 1/4 cup Fresh Parsley chopped
  • 1 teaspoon Dried Oregano or Thyme or 1 tablespoon fresh
  • Salt and Black Pepper to taste
  • 1 tablespoon Butter Optional

Method
 

Preparation
  1. Pat chicken breasts dry and slice or pound them to 1/2 inch thickness. Season generously with salt and pepper.
  2. In a small bowl, whisk together lemon juice, lemon zest, minced garlic, chicken broth, and dried oregano or thyme.
  3. Heat olive oil in a large skillet over medium-high heat.
Cooking
  1. Sear chicken in batches for 3-5 minutes per side until golden brown and cooked through.
  2. Remove chicken from the skillet and set it aside.
  3. Reduce heat to medium-low and pour the lemon-garlic mixture into the skillet, scraping up any browned bits.
  4. Simmer the sauce for 2-3 minutes until slightly thickened, then stir in butter if desired.
Serving
  1. Return cooked chicken to the pan and coat it in the sauce.
  2. Garnish generously with fresh chopped parsley and serve immediately.

Notes

For extra flavor, let the chicken marinate in some of the lemon-garlic mixture for 30 minutes before cooking.
