  • 1/2 cup crumbled feta cheese
  • 1 cup cherry tomatoes halved
  • 2 cups fresh spinach packed
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder (or 1 clove fresh garlic, minced)
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C). Then, drizzle olive oil into an oven-safe dish.
  2. Add halved cherry tomatoes and fresh spinach to the dish, then sprinkle with garlic powder, dried oregano, red pepper flakes (if using), and a pinch of salt and pepper. Gently toss to combine all ingredients.
  3. Evenly distribute the crumbled feta cheese over the tomato and spinach mixture.
  4. Create 2-4 small indentations or "wells" in the mixture using the back of a spoon.
  5. Carefully crack one egg into each well and season lightly with a touch more salt and pepper if desired.
  6. Transfer the dish to the preheated oven and bake for 7-10 minutes, or until egg whites are set and yolks are runny or cooked to your preference.
  7. Carefully remove from the oven and serve hot immediately.

Notes

You can adjust the baking time based on desired egg yolk consistency. For a richer flavor, consider adding a sprinkle of fresh basil or parsley before serving.
