- Preheat your oven to 400°F (200°C). Then, drizzle olive oil into an oven-safe dish.
- Add halved cherry tomatoes and fresh spinach to the dish, then sprinkle with garlic powder, dried oregano, red pepper flakes (if using), and a pinch of salt and pepper. Gently toss to combine all ingredients.
- Evenly distribute the crumbled feta cheese over the tomato and spinach mixture.
- Create 2-4 small indentations or "wells" in the mixture using the back of a spoon.
- Carefully crack one egg into each well and season lightly with a touch more salt and pepper if desired.
- Transfer the dish to the preheated oven and bake for 7-10 minutes, or until egg whites are set and yolks are runny or cooked to your preference.
- Carefully remove from the oven and serve hot immediately.
Notes
You can adjust the baking time based on desired egg yolk consistency. For a richer flavor, consider adding a sprinkle of fresh basil or parsley before serving.
