Ingredients
  

For the Chicken:
  • 4 boneless, skinless chicken breasts (about 1.5 - 2 lbs total), cut into 1-inch pieces or left as whole cutlets
  • 1/2 cup grated Parmesan cheese freshly grated is always best!
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • salt pinch (adjust based on Parmesan saltiness)
For the Vegetables:
  • 1 lb small red potatoes quartered
  • 1 large head of broccoli cut into florets
  • 1 bell pepper (any color) chopped into 1-inch pieces
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
Optional Garnish:
  • Fresh parsley chopped

Method
 

Preheat & Prep
  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.
Prep Vegetables
  1. In a large bowl, combine potatoes, broccoli, and bell pepper; toss with olive oil, garlic powder, salt, and pepper until coated. Spread the vegetables in a single layer on one half of the prepared baking sheet.
Prep Chicken
  1. In a separate bowl, combine Parmesan cheese, olive oil, garlic powder, oregano, black pepper, and salt. Add chicken and toss until generously coated with the mixture.
Assemble & Bake
  1. Arrange the Parmesan-crusted chicken pieces in a single layer on the other half of the baking sheet, next to the vegetables, ensuring minimal overlap for even cooking.
Roast
  1. Bake for 20-25 minutes until chicken is cooked through (165°F/74°C internal temperature) and vegetables are tender and slightly caramelized. For extra crispy chicken, broil for the last 2-3 minutes, watching carefully.
Serve
  1. Remove from the oven, garnish with fresh parsley if desired, and serve immediately.

Notes

For variation, try different vegetables like asparagus or green beans. Adjust seasoning to your preference, especially the salt content given the Parmesan cheese. Ensure chicken reaches an internal temperature of 165°F (74°C) for safe consumption.
