  • 2 medium Lemons for zest and juice
  • 4 cloves Fresh garlic cloves minced
  • 2 tablespoons Extra virgin olive oil
  • teaspoon Dried oregano optional
  • teaspoon Red pepper flakes optional
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Freshly ground black pepper
  • 0.25 cup Fresh parsley for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.
  2. In a medium bowl, combine the shrimp, olive oil, lemon juice, minced garlic, salt, pepper, oregano, and red pepper flakes. Toss well and let marinate for 10-15 minutes.
Cooking
  1. Spread the marinated shrimp in a single layer on the prepared baking sheet, optionally adding thin lemon slices.
  2. Roast for 8-12 minutes, or until the shrimp are pink and opaque; avoid overcooking to prevent them from becoming rubbery.
Finishing Touches
  1. Remove from the oven, squeeze the juice of the remaining lemon half over the shrimp, and garnish with fresh chopped parsley.

Notes
