Preparation
- Preheat oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
- Toss cubed chicken with 1 tablespoon olive oil, half of the oregano, basil, paprika, salt, and pepper in a medium bowl.
- Combine sliced zucchini, chopped onion, minced garlic, remaining 1 tablespoon olive oil, and the rest of the spices in a large bowl.
Baking
- Spread seasoned chicken evenly in the baking dish, then arrange the zucchini and onion mixture over it.
- If using, spoon marinara sauce or diced tomatoes over the vegetables.
- Bake for 20 minutes in the preheated oven.
- Remove from oven, sprinkle mozzarella cheese over the zucchini, and return to oven for another 15-20 minutes.
- Continue baking until chicken is cooked through, zucchini is tender, and cheese is melted and golden.
Serving
- Let the dish rest for 5-10 minutes.
