One-Pan Chicken Zucchini Bake with Mozzarella

This easy one-pan chicken and zucchini bake is a perfect weeknight dinner, combining savory chicken, tender zucchini, and bubbly mozzarella cheese in a single dish for minimal cleanup.

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • 3 medium zucchinis, trimmed and sliced into 1/2-inch thick rounds or half-moons
  • 1 small yellow onion, chopped
  • 2-3 cloves garlic, minced
  • 2 tablespoons olive oil
Seasoning & Toppings
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon paprika
  • Salt and freshly ground black pepper to taste
  • 1 cup shredded mozzarella cheese or a blend of mozzarella and cheddar), optional
  • 1/2 cup marinara sauce or diced tomatoes optional

Method
 

Preparation
  1. Preheat oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  2. Toss cubed chicken with 1 tablespoon olive oil, half of the oregano, basil, paprika, salt, and pepper in a medium bowl.
  3. Combine sliced zucchini, chopped onion, minced garlic, remaining 1 tablespoon olive oil, and the rest of the spices in a large bowl.
Baking
  1. Spread seasoned chicken evenly in the baking dish, then arrange the zucchini and onion mixture over it.
  2. If using, spoon marinara sauce or diced tomatoes over the vegetables.
  3. Bake for 20 minutes in the preheated oven.
  4. Remove from oven, sprinkle mozzarella cheese over the zucchini, and return to oven for another 15-20 minutes.
  5. Continue baking until chicken is cooked through, zucchini is tender, and cheese is melted and golden.
Serving
  1. Let the dish rest for 5-10 minutes.

Notes

For extra flavor, consider marinating the chicken for 30 minutes before baking. You can also add other vegetables like bell peppers or cherry tomatoes. Ensure the chicken reaches an internal temperature of 165°F (74°C) for safety. Garnish with fresh parsley for a touch of color and freshness.
