One-Bowl Beef and Onion Meatloaf

Ingredients
  

Meatloaf
  • 1.5 lbs 80/20 lean ground beef
  • ¾ cup plain breadcrumbs
  • 1 large egg
  • ½ cup finely diced onion
  • ¼ cup milk
  • 2 tablespoons ketchup divided
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
Glaze
  • 6 tablespoons ketchup remaining
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard

Method
 

Preparation
  1. Preheat oven to 350°F (175°C) and prepare a loaf pan or baking sheet by lightly greasing or lining it with parchment paper.
Mixing and Forming
  1. In a large bowl, combine ground beef, breadcrumbs, egg, onion, milk, 2 tablespoons ketchup, Worcestershire sauce, salt, garlic powder, and black pepper.
  2. Gently mix until just combined, being careful not to overmix.
  3. Transfer the mixture to the prepared pan, pressing it into an even shape, or form a loaf on the baking sheet.
Glazing and Baking
  1. In a small bowl, whisk together the remaining 6 tablespoons ketchup, brown sugar, and Dijon mustard until smooth.
  2. Spread the glaze evenly over the meatloaf.
  3. Bake for 55-65 minutes, or until the internal temperature reaches 160°F (71°C).
Resting and Serving
  1. Remove from oven and let the meatloaf rest for 5-10 minutes.

Notes

Avoid overmixing the meatloaf mixture to ensure a tender texture. Resting the meatloaf after baking helps retain its juices and makes for easier slicing.
