  • 1 cup creamy peanut butter all-natural preferred
  • ½ cup honey or maple syrup
  • 1 cup rolled oats gluten-free if desired
  • ½ cup ground flaxseed
  • ½ cup mini chocolate chips or chopped dark chocolate
  • 1 teaspoon vanilla extract
  • Pinch salt

Method
 

Preparation
  1. In a large bowl, combine peanut butter, honey (or maple syrup), and vanilla extract, then stir until smooth.
  2. Add rolled oats, ground flaxseed, mini chocolate chips, and salt to the peanut butter mixture.
  3. Mix all ingredients thoroughly until a thick, uniform dough forms that holds together when pressed.
  4. Roll small portions of the mixture, about 1-inch in diameter, into compact balls.
  5. Place the energy bites on parchment paper-lined plate or baking sheet and refrigerate for at least 30 minutes to firm up.
  6. Once chilled, serve and enjoy your homemade energy boost.

Notes

For extra flavor, you can add a sprinkle of cinnamon or a dash of espresso powder to the mixture.
