Ingredients
  

Meatloaf
  • 1.5 lbs lean ground turkey 93% lean
  • 1 large egg lightly beaten
  • 1/2 cup whole wheat breadcrumbs
  • 1/2 cup red onion finely chopped
  • 2 garlic minced
  • 1/4 cup sun-dried tomatoes oil-packed, drained, finely chopped
  • 1/4 cup Kalamata olives chopped
  • 1/4 cup feta cheese crumbled
  • 2 tablespoons fresh oregano chopped (or 1 tbsp dried)
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil for sautéing vegetables if desired
Glaze (Optional)
  • 2 tablespoons tomato paste
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey

Method
 

Instructions
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground turkey, beaten egg, and whole wheat breadcrumbs.
  3. Add the red onion, garlic, sun-dried tomatoes, Kalamata olives, feta cheese, oregano, basil, salt, and black pepper to the bowl.
  4. Gently mix all ingredients until just combined, being careful not to overmix.
  5. Form the mixture into a large loaf or several smaller loaves/patties on the prepared baking sheet.
  6. If using the glaze, whisk together tomato paste, balsamic vinegar, and honey, then spread it over the meatloaf.
  7. Bake for 40-50 minutes for a large loaf (25-35 minutes for mini loaves) or until an internal temperature of 165°F (74°C) is reached.
  8. Remove from the oven and let the meatloaf rest for 5-10 minutes before slicing.
  9. Allow the meatloaf to cool completely before portioning into individual meal prep containers.

Notes

The olive oil for sautéing vegetables mentioned in the ingredients is optional and not used in the main meatloaf recipe. Adjust baking time based on the thickness of your meatloaf. An internal thermometer is recommended to ensure proper doneness.
