Method
 

Cooking Steps
  1. Heat olive oil in a non-stick pan over medium heat.
  2. Whisk eggs with salt and pepper in a small bowl, then add chopped spinach and cherry tomatoes.
  3. Pour the egg mixture into the hot pan and let it sit for 30-45 seconds until the edges set.
  4. Using a spatula, gently push cooked egg from the edges towards the center, allowing uncooked egg to flow underneath.
  5. Continue pushing and folding until the eggs are mostly set but still slightly moist.
  6. Stir in the crumbled feta cheese during the final 30 seconds of cooking.
  7. Remove from heat immediately to prevent overcooking and serve warm.

Notes

For extra flavor, you can add a pinch of dried oregano to the egg mixture. Adjust salt and pepper to your taste.
