Cooking Steps
- Heat olive oil in a non-stick pan over medium heat.
- Whisk eggs with salt and pepper in a small bowl, then add chopped spinach and cherry tomatoes.
- Pour the egg mixture into the hot pan and let it sit for 30-45 seconds until the edges set.
- Using a spatula, gently push cooked egg from the edges towards the center, allowing uncooked egg to flow underneath.
- Continue pushing and folding until the eggs are mostly set but still slightly moist.
- Stir in the crumbled feta cheese during the final 30 seconds of cooking.
- Remove from heat immediately to prevent overcooking and serve warm.
Notes
For extra flavor, you can add a pinch of dried oregano to the egg mixture. Adjust salt and pepper to your taste.
