  • 4 (6-ounce) salmon fillets skin-on or skin-off
  • 1 broccoli cut into florets
  • 1 large bell pepper (any color), chopped into 1-inch pieces
  • 1 cup cherry tomatoes halved
  • 1/2 red onion sliced
  • 1/2 cup pitted Kalamata olives
  • 1/4 cup sun-dried tomatoes (oil-packed, drained and chopped)
  • 3 tablespoons extra virgin olive oil
  • 1 lemon half sliced, half for juicing
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste

  • Fresh parsley or dill chopped
  • Feta cheese crumbled

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a large bowl, combine broccoli, bell pepper, cherry tomatoes, red onion, Kalamata olives, and sun-dried tomatoes.
Cooking
  1. Drizzle vegetables with 2 tablespoons of olive oil, minced garlic, dried oregano, salt, and pepper, then toss to coat and spread on one side of the baking sheet.
  2. Pat salmon fillets dry, season with salt and pepper, and lightly brush with the remaining 1 tablespoon of olive oil.
  3. Place salmon on the other side of the baking sheet with lemon slices arranged over and around.
  4. Roast for 15-20 minutes, or until the salmon is flaky and vegetables are tender-crisp.
  5. Remove from oven and garnish with fresh parsley or dill and crumbled feta cheese, if desired.
  6. Squeeze fresh lemon juice over the dish before serving immediately.

Notes

Cooking times may vary based on the thickness of your salmon fillets and your oven. For extra flavor, marinate the salmon in a bit of olive oil and herbs for 15-30 minutes before baking. Ensure vegetables are spread in a single layer for even roasting and crispness.
