  • 1 tbsp olive oil
  • 1 large yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1/2 cup sun-dried tomatoes, packed in oil, drained and chopped
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1/2 cup low-sodium chicken broth
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/4 tsp black pepper
  • Salt to taste
  • 1/2 cup crumbled feta cheese (reduced fat optional)
  • 1/4 cup fresh parsley, chopped for garnish
  • Lemon wedges for serving (optional)

Cooking Steps
  1. Heat olive oil in a skillet and cook the ground turkey until browned, then drain any excess fat.
  2. Push the turkey aside and sauté chopped onion, red bell pepper, and zucchini until softened.
  3. Add minced garlic and sun-dried tomatoes, cooking until fragrant, about 1-2 minutes.
  4. Stir in diced tomatoes, chicken broth, oregano, basil, and black pepper, then bring to a simmer.
  5. Reduce heat, cover, and simmer for 10-15 minutes until vegetables are tender.
  6. Taste and adjust seasoning with salt as needed.
  7. Remove from heat and stir in the crumbled feta cheese.
  8. Garnish with fresh parsley and serve with lemon wedges if desired.

Notes

For extra flavor, consider adding a pinch of red pepper flakes with the garlic. Serve with a side of whole wheat couscous or a simple green salad for a complete meal.
