  • 1 lb large or extra-large shrimp, peeled and deveined, thawed if frozen
  • 1 pint cherry tomatoes, halved
  • 2 medium zucchini, chopped into 1-inch pieces
  • 1 medium red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 2 tablespoons olive oil
  • 1 teaspoon dried dill
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste
  • 1/4 cup crumbled feta cheese, for finishing
  • Fresh chopped parsley for garnish (optional)
  • Fresh lemon wedges for serving (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Combine tomatoes, zucchini, onion, and olives in a bowl with 1 tablespoon olive oil, dill, garlic powder, salt, and pepper; toss to coat.
  3. Spread the seasoned vegetables on the baking sheet and roast for 10-12 minutes until slightly softened.
  4. While vegetables roast, pat shrimp dry and toss with the remaining 1 tablespoon olive oil, salt, and pepper.
  5. After initial roasting, add seasoned shrimp to the baking sheet with the vegetables, spreading them in a single layer.
  6. Return to the oven and roast for another 8-10 minutes, until shrimp are opaque and pink, and vegetables are tender-crisp.
  7. Remove from oven and sprinkle crumbled feta cheese over the hot shrimp and vegetables.
  8. Serve immediately, with optional fresh chopped parsley and lemon wedges.

Notes

Be careful not to overcook the shrimp to ensure they remain tender. Adjust seasoning to your preference.
