Preparation
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Combine tomatoes, zucchini, onion, and olives in a bowl with 1 tablespoon olive oil, dill, garlic powder, salt, and pepper; toss to coat.
- Spread the seasoned vegetables on the baking sheet and roast for 10-12 minutes until slightly softened.
- While vegetables roast, pat shrimp dry and toss with the remaining 1 tablespoon olive oil, salt, and pepper.
- After initial roasting, add seasoned shrimp to the baking sheet with the vegetables, spreading them in a single layer.
- Return to the oven and roast for another 8-10 minutes, until shrimp are opaque and pink, and vegetables are tender-crisp.
- Remove from oven and sprinkle crumbled feta cheese over the hot shrimp and vegetables.
- Serve immediately, with optional fresh chopped parsley and lemon wedges.
Notes
Be careful not to overcook the shrimp to ensure they remain tender. Adjust seasoning to your preference.
