  • 1/2 cup Feta cheese crumbled
  • 1/4 cup sun-dried tomatoes chopped
  • 1/2 cup fresh spinach chopped
  • 1/4 cup Kalamata olives pitted and sliced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • nutmeg optional
  • 1 tablespoon olive oil

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a pie plate or 8x8 inch baking dish.
  2. Heat olive oil in a skillet, add chopped spinach, and cook until wilted (about 2-3 minutes). Remove from heat.
  3. In a large bowl, whisk together eggs, milk, salt, pepper, and nutmeg until well combined and slightly frothy.
  4. Scatter the wilted spinach, sun-dried tomatoes, Kalamata olives, and crumbled Feta cheese evenly in the prepared baking dish.
  5. Carefully pour the egg mixture over the fillings.
  6. Bake for 30-40 minutes until the center is set and a knife inserted comes out clean; the top should be golden brown.
  7. Let the quiche cool for 5-10 minutes before slicing and serving.

Notes

For extra flavor, you can add a pinch of red pepper flakes to the spinach while cooking. This quiche is also great for meal prepping; simply store individual slices in airtight containers in the refrigerator.
