Preparation
- Preheat your oven to 375°F (190°C) and lightly grease a pie plate or 8x8 inch baking dish.
- Heat olive oil in a skillet, add chopped spinach, and cook until wilted (about 2-3 minutes). Remove from heat.
- In a large bowl, whisk together eggs, milk, salt, pepper, and nutmeg until well combined and slightly frothy.
- Scatter the wilted spinach, sun-dried tomatoes, Kalamata olives, and crumbled Feta cheese evenly in the prepared baking dish.
- Carefully pour the egg mixture over the fillings.
- Bake for 30-40 minutes until the center is set and a knife inserted comes out clean; the top should be golden brown.
- Let the quiche cool for 5-10 minutes before slicing and serving.
Notes
For extra flavor, you can add a pinch of red pepper flakes to the spinach while cooking. This quiche is also great for meal prepping; simply store individual slices in airtight containers in the refrigerator.
