  • 5-6 oz (140-170g) fresh spinach roughly chopped or torn
  • 1 large onion chopped
  • 2-3 garlic minced
  • Olive oil or preferred cooking oil
  • Salt and freshly ground black pepper to taste
  • 1 (14.5 oz) can cannellini beans rinsed and drained
  • 1/2 cup chicken or vegetable broth
  • 1/4 cup sun-dried tomatoes chopped (oil-packed preferred)
  • 1 tbsp balsamic vinegar
  • 1/2 tsp dried basil
  • 1/4 cup Kalamata olives pitted and halved
For Garnish
  • 2 tbsp crumbled feta cheese
For Serving (optional)
  • Crusty bread

Method
 

Cooking Process
  1. Heat a large skillet over medium-high heat with 1 tbsp olive oil, then brown the ground beef for 5-7 minutes until no pink remains, breaking it up with a spoon.
  2. Drain any excess fat from the skillet, then add the chopped onion and cook for 3-5 minutes until softened.
  3. Stir in the minced garlic and cook for an additional minute until fragrant, then add the chopped spinach and cook for 2-3 minutes until wilted.
  4. Season generously with salt and pepper, then add the rinsed cannellini beans, chicken or vegetable broth, chopped sun-dried tomatoes, and dried basil.
  5. Bring the mixture to a gentle simmer and cook for 5-7 minutes to allow the sauce to thicken and flavors to meld.
  6. Stir in the balsamic vinegar and Kalamata olives, then adjust seasoning with salt and pepper as needed.
  7. Serve directly from the skillet, garnished with crumbled feta cheese; optionally, offer with crusty bread for dipping.

This one-pan Mediterranean beef and spinach skillet is a quick and healthy meal. Feel free to adjust the amount of garlic and spices to your preference. If you don't have cannellini beans, great northern beans or chickpeas would also work well.
