  • 1 lb fresh asparagus tough ends trimmed
  • 3 tablespoons unsalted butter
  • 3 cloves fresh garlic minced
  • 1 tablespoon olive oil
  • ¼ teaspoon salt or to taste

  • 1 tablespoon fresh lemon juice from about ½ lemon

Preparation
  1. Wash the asparagus and snap off the tough, woody ends, discarding them before cooking.
Cooking
  1. Melt the butter in a large skillet or oven-safe dish over medium heat, then add minced garlic and sauté for 30-60 seconds until fragrant.
  2. For pan sautéing, add asparagus to the skillet and cook for 5-7 minutes, stirring occasionally, until tender-crisp and bright green.
  3. For roasting, transfer the garlic butter and asparagus to a baking sheet and roast at 400°F (200°C) for 8-12 minutes until tender-crisp.
Finishing
  1. Remove the cooked asparagus from heat, season with salt and pepper, then drizzle with fresh lemon juice and toss gently before serving warm.

For best results, do not overcrowd the pan when sautéing or roasting the asparagus to ensure even cooking and a crisp texture.
