- Line a fine-mesh sieve with cheesecloth or a paper towel and place ricotta in it over a bowl; refrigerate for at least 30 minutes to drain excess liquid for a thick dip.
- Combine drained ricotta with salt, pepper, and optional lemon zest in a medium bowl; whip with an electric mixer for 1-2 minutes until smooth, or stir gently for a rustic texture.
- Transfer the whipped ricotta to a serving bowl or shallow dish, spreading it out slightly.
- Generously drizzle the hot honey over the ricotta, then sprinkle with chopped fresh chives and finish with a light drizzle of olive oil.
- Serve immediately with crackers, crostini, fresh fruit, or vegetables.
