Preparation
- Butterfly or pound chicken breasts to an even ½ to ¾ inch thickness, then pat them thoroughly dry.
- Combine garlic powder, onion powder, dried oregano, salt, and black pepper in a small bowl.
- Sprinkle the seasoning mix generously over both sides of each chicken breast, pressing gently.
Cooking
- Heat olive oil in a large skillet over medium-high heat until shimmering, then add butter and let it melt.
- Place seasoned chicken breasts in the hot skillet and cook for 4-6 minutes per side, until golden brown and cooked through (165°F/74°C).
- Once chicken is fully cooked, reduce heat to low and top each chicken breast generously with freshly grated Parmesan cheese.
- Cover the skillet immediately for 1-2 minutes until Parmesan is melted and bubbly, or flash under a broiler for extra crispiness.
Serving
- Remove chicken from skillet and let rest for a few minutes, then garnish with fresh parsley if desired.
Notes
For best results, use freshly grated Parmesan cheese rather than pre-shredded. Cooking chicken in batches ensures even browning and prevents overcrowding the pan. The brining process helps to make the chicken extra juicy.
