  • 1/4 ripe avocado
  • small handful fresh spinach Optional

  • 1 pat butter or spray of oil

Method
 

Cooking Steps
  1. Whisk 2 eggs with a splash of milk, salt, and pepper in a small bowl. Add spinach or cheese to the egg mixture if desired.
  2. Heat a non-stick pan over medium heat with butter or oil.
  3. Pour the egg mixture into the heated pan and scramble until just set, about 2-3 minutes.
  4. While eggs cook, toast one slice of whole-wheat bread.
