  • ½ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp black pepper
Creamy Spinach
  • 10 oz fresh spinach (1 bag)
  • 1 tbsp butter
  • 1 garlic clove, minced
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh parsley chopped for garnish (optional)

Method
 

Chicken Preparation
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet.
  2. Pat the chicken breasts dry with paper towels, then drizzle with olive oil and season with Italian seasoning, garlic powder, salt, and black pepper.
  3. Place the seasoned chicken on the baking sheet and roast for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
Creamy Spinach Preparation
  1. While the chicken roasts, melt butter in a large skillet over medium heat, then add minced garlic and cook for 30 seconds until fragrant.
  2. Add the fresh spinach to the skillet, stirring until wilted.
  3. Pour in the heavy cream and bring to a gentle simmer.
  4. Reduce heat to low, stir in Parmesan cheese and lemon juice, and cook for 1-2 minutes until the sauce slightly thickens.
Serving
  1. Once cooked, slice the chicken or serve it whole over the creamy spinach.
  2. Garnish with fresh parsley, if desired.

Notes

For extra flavor, marinate the chicken for at least 30 minutes before roasting. You can also add a pinch of red pepper flakes to the spinach for a subtle kick.
